JANUARY – FEBRUARY 2008 SCHEDULE OF LIFESTYLE COURSES

{This is the schedule of the Lifestyle Courses in the Center for Asian Culinary Studies in Davao City.}

January 17-18, Thursday-Friday – BASIC BAKING WORKSHOP. Learn hands-on the basics in baking in a two-day workshop with Chef Jun Jun de Guzman.
Fee: Php 2,800.00 inclusive of ingredients from 5:00-10:00 PM.

January 21-22, Monday-Tuesday – BASIC PASTRY WORKSHOP. Learn hands-on the three basic pastry doughs in a two-day workshop with Chef Jun Jun de Guzman. You will be making pies, tarts and quiches.
Fee: Php 2,800.00 inclusive of ingredients from 5:00-10:00 PM.

January 22, Tuesday – BARBECUES and MARINADES. Chef Jun Jun demonstrates simple marinated food for everyday cookin. Recipes includes: Beef Tapa, Chicken Tocino, Baby Back Ribs, Longganisang Hubad, Inihaw na Liempo and side dishes to go with like Java rice, Baguio Bean Salad and Fried Eggplant.
Fee: Php 1,300.00 inclusive of ingredients from 11:00-3:00 PM.

January 23, Wednesday – FAVORITE CATERING DISHES 2. The second part of a series of classes for caterers, housewifes and students who wants to start on a home based business. Chef Jun Jun demonstrates dishes he has done for his catering business. Recipes includes: Ceasar Salad, Roast Beef Tenderloin with Instant Mushroom Gravy, Lemon and Capers Fish Fillet, Chicken Callos, Oven Baked Sate Spareribs and Baked Mango Meringue.
Fee: Php 1,800.00 inclusive of ingredients from 6:00-10:00 PM.

January 24, Thursday – CATERING DESSERTS 2. This class is for restaurant owners, cake and dessert makers, Chef Jun Jun de Guzman, our pastry head will demonstrates easy desserts for small and big parties. Recipes: Peach Charlottes, Black Chocolate Gelatine, Mango Panna Cotta, Pineapple Cake, Toffee Pudding and Strawberry Tiramisu.
Fee: Php 1,500.00 inclusive of ingredients from 11:00-3:00 PM.

January 24, Thursday – BAKESHOP SPECIALTIES 1. Chef Jun Jun’s favorites are now for you to learn: Chocolate Revel Bars, Cheese Cupcakes, Pistachios Biscotti, Dried Mango Pie Bars, Chocolate Nut Loaf, Lemon Poppy Seed Cake.
Fee: Php 1,500.00 inclusive of ingredients from 6:00-10:00 PM.

January 25, Friday – JUN JUN’S SPECIAL CAKES 2. chocolate Sans Rival, Potato Praline Torte, Graham Cracker Cake with Caramel Icing, Mango Cake and Japanese Cheesecake are recipes Chef Jun Jun will be presenting in this special class of his famous dessert cakes.
Fee: Php 1,500.00 inclusive of ingredients from 5:00-10:00 PM.

January 28, Monday – EVERYBODY LOVES CHICKEN 3. More chicken dishes for everyone to enjoy, housewives, culinary students, caterer…this class is for you. Chef Jun Jun demonstrates and cooks foa all of you. Recipes includes: Chicken Curry, Salpicon-Chicken Salad with Fried Potatoes, Chicken and Ham Macaroni, Chicken Adobo with Tomatoes, Baked Chicken Inasal and Chicken in Seven-Up.
Fee: Php 1,500.00 inclusive of ingredients from 11:00-3:00 PM.

January 29, Tuesday – PINOY STEW. Simple Filipino stews with a difference for all to learn and enjoy, Chef Jun Jun demonstrates and teaches; Beef Stew Supreme, Monggo and Chorizo Stew Stew, Pinatisang Short Ribs, Estofadong Pata ng Baboy, Mechadong Navotas and Toyo Ba.
Fee: Php 1,500.00 inclusive of ingredients from 11:00-3:00 PM.

January 30-31, Wednesday-Thursday – BASIC MERINGUE WORKSHOP. A two day workshop on the meringue dessert baking. A ladder type method will be done by the class from cookies to simple cakes as well as the following other desserts: Pavlova, Canonigo, Mango Torte, Sans Rival will be done by everyone.
Fee: Php 2,800.00 inclusive of ingredients from 6:00-10:00 PM.

January 31, Thursday – SEAFOOD DISHES 1. As the Holy Week approaches, Chef Jun Jun demonstrates seafood dishes for the whole family. Recipes includes: Tuna Crepe Lasagne, Salmon Caserole, Bacalao, Crabcakes with Mornay Sauce, Tuyo and Tomato Pasta, Baked Prawns with Bell Pepper Sauce.
Fee: Php 1,500.00 inclusive of ingredients from 11:00-3:00 PM.

February 1, Friday – CLASSIC PASTA SAUCES. Aglio E Olio (Garlic and Olive Oil), Pesto Alla Genovese, Pomodoro e Basilico (Tomato and Basil), Putanesca, All Alfredo and Carbonara are distinct Italian Pasta Sauces Chef Jun Jun will be demonstrating.
Fee: Php 1,400.00 inclusive of ingredients from 11:00-2:00 PM.

February 1, Friday – FAVORITE CATERING DISHES 1. This class is for all housewives, cooks and anyone who wants to learn new dishes for their catering business. Recipes from Chef Jun Jun de Guzman includes: Assorted Salad with Pesto Vinaigrette and Garlic Ranch Dressing, Mushroom and Barley Soup, Italian Short Ribs Stew, Chicken Imperial, Royal Lapu-lapu and White Chocolate Tiramisu.
Fee: Php 1,800.00 inclusive of ingredients from 6:00-10:00 PM.

February 4, Monday – COFFESHOP SPECIALTIES. Need new desserts for your coffee shop? Here is the class for you! Recipes includes: White Chocolate Crème Brulee, Turtle Pie, Strawberry Shortcake, Orange Butter Cake, Carmelitas and Black Bottom Brownies.
Fee: Php 1,500.00 inclusive of ingredients from 6:00-10:00 PM.
